recipe for naan bread

This is a recipe I copied out of A Taste of India, by Roz Denny, copyright 1994. It's a children's cookbook--there's a series of them (we also had out A Taste of China at one point.

Ingredients:

3 1/3 cups flour (and extra for rolling and kneading)
1 1/3 tablespoons yeast
2 teaspoons salt
1 teaspoon whole cumin seeds
1 tablespoon sesame seeds
2/3 cup plain, natural yoghurt
1 cup warm water
2 tablespoons melted butter
oil for pan

Directions:

Sift flour into big bowl.
Add yeast, salt, seed.
Add yoghurt, water, butter.
Mix, then turn out and knead (I end up adding a fair amount of flour so it won't be sticky)

Let rise until doubled: 2-4 hours
Punch down, knead, divide into pieces.
Roll out each piece.

Brush oil on both sides*, cook in hot skillet.

*I never do this--instead I put the oil in the skillet. Se itsalouwelylife's suggestions, though.

Thank you for this simple recipe...I have never made Naan at home yet, will do so now! But we normally make naan by putting the rolled out naan in a brick oven, not on the skillet...does it come out fluffy and soft that way?

Hey itsalouwelylife....how to cook naan on the thaavaa?

Turn the Tawa upside down. Make sure the surface (upside down...bottom up) is clean and smooth. Stick the rolled out naan to the surface with some water. Let the tawa remain on the gas stove for a while till you think the stuck portion of the naan is done. Obviously the concave postion is facing the flame initially. Turn the Tawa around so that the uncooked portion of the naan faces the flame. Let that side cook for a while and then ease off the cooked naan from the tawa... (and now I hope and pray this works for all of you...the way I have been passing these tios like I was an expert...frankly, I am not!)

and what to do if (like me) you only have non-stick tawas?

I will try this the very next time I make naan, and I'll let you know how it goes with the electric stove!

I'm sorry to sound stupid, but what's a tawa?
